It is unsurprising that at a time when shelves are empty at area food pantries that there is no dearth of canned plums and zucchini. But Ohio State School Extension's Tina Luersman has discovered a way to get residents visiting pantries to eat them and cook them for their families.
As a part of OSU's family nourishment program, Luersman can make plums, black beans and zucchini mouth watering in muffins, salsa and pasta. She is getting her recipes from the US Office of Agriculture site, which comes up with creative methods to get youngsters
and adults to eat veggies and detested items.
"I had not attempted black bean salsa before I found the recipe.
I did not know what it was going to sample like, but now I make it for my family.". The nourishment program was the idea of OSU Extension's Dan Remley who developed the concept 4 years back. The program is offered at choice pantries statewide that permit clients to get groceries at food pantries based primarily on the food groups. Remley expounded the food demonstrations by Luersman teach area working poor a way to fix fitter meals. "The message is for them to learn how to make well balanced meals using as many of the food groups as they can," Remley announced.
